Lions Mane
Lion's Mane, also known as Hedgehog Mushroom, Yamabushitake or Houtou, is appropriately named after its appearance and has long, dangling spines. It is native to North America, Europe and Asia, although it’s not cultivated widely in areas outside of Asia. Research shows that Lion’s Mane possesses anti-inflammatory, antioxidant, immunostimulating, and neuroprotective properties, among a host of other health benefits. It has been used for thousands of years as a medicinal mushroom, especially among traditional Chinese medicine practitioners. Lion’s Mane is often used as a meat substitute because of its dense texture. It can be marinated to give it just about any flavor profile and can also be prepared to bring out its natural, delicate, seafood-like flavor.
