Italian Oyster

The Italian oyster mushroom is also known as the phoenix oyster, Indian oyster, and lung oyster.  Known to help alleviate hypertension and rich in antioxidants, Italian oysters have a grey to brown color, absent stem, and frilly edges. Their flavor is similar to blue oysters, but their texture is a little softer and more velvety.  Oysters can be added to stews and soups, stir-frys, and sauces, or used as pizza toppings.  They can also be sauteed with a few tablespoons of butter or olive oil, garlic cloves, pepper, and spices like thyme.
